Story:

A distant relative of the sunflower, yacon root has a glycemic index of 1 making it one of, if not the only truly raw, organic, natural and sugar-based low glycemic sweetener available. This slightly sweet root derives its sweetness from fructooligosaccharides, a highly desirable type of sugar.
